Gluten
Gluten is a mixture of different proteins found in wheat and other grains including oats, barley, rye and triticale. Gluten includes glutelins and prolamins. It gives bread dough its elastic texture.
You may notice this ingredient on many bread products, especially those touting low-carb qualities. Gluten is a valuable ingredient due to its volume and sturdy attributes, as well as the high protein count. It is a high-protein, low-carbohydrate substance.
First and foremost Oasis Bakery would like you to be aware—and possibly recognize—any potential health risks. Unfortunately, many people find themselves unable to properly digest gluten due to certain conditions such as:
- Celiac Disease - a genetically-inherited intestinal disease. The disease prevents a person from properly digesting the protein in gluten, which causes damage to the small intestine.
- Autism – a mental disorder that hinders the ability to communicate with and relate to others. Some research studies indicate that autism is linked to the inability to break down wheat proteins (gluten).
We would like you to know that, if you are sensitive to gluten, our Flourless Sprouted 7-Grain, Flourless Sprouted Salt-Free, Flourless Sprouted Wheat, Flourless Sprouted Rye and Flourless Sprouted Pumpernickel breads are made with NO ADDED GLUTEN. We do not add gluten or any flour to the product, leaving only the minimal, naturally-occurring amounts of gluten in the wheat berry.
